This recipe tastes like Fall to me. Since the 100 degree weather out here in Texas isn't feeling anything like Fall, I figured I could at least bake some things that remind me the Fall season still exists out there somewhere.
I've been in such a Fall mood lately. I even pulled out the Halloween costumes last night to figure out what we're all going to be this year. However, this morning was spent baking in the sun at the pool. I'm not complaining about that. It was really fun, but everything about it said Summer, not Fall. I don't want to miss out on one of my favorite seasons, so I guess I'll do what I can to get a little taste or smell of Fall here and there. Last week I made some gluten free pumpkin cookies, yesterday I made some pumpkin oatmeal, and today I tried this pumpkin granola recipe I got from my mom. I don't normally like to bake, but this recipe was so easy!
Here it is:
Pumpkin Granola
3 C. oats
1 C. pecan pieces
1 C. sliced almonds
1/4 C. honey
1/4 C. molasses
1/2 C. pumpkin
1/4 C. oil
2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
2 tsp. vanilla
1/4 C. ground flaxseed
1 tsp. stevia or sweetener of choice
I mixed the dry ingredients and the wet ingredients separate, then I mixed them together. Spread on a cookie sheet and bake 20 min @ 350 degrees. Stirring after 10 min. That's all!
It tastes really good with almond milk! It would also be really good in vanilla yogurt, or just plain as a snack to-go ( I put some in zip-lock bags so Scott can take it to work for lunches). Scott liked it, but I think he'd like it more if it was a little sweeter. It's sweet enough if you add it to milk or something, but on it's own it could probably use a little more sweetener. I'm going to try that next time.
Anyone else already thinking about what to be for Halloween?
Sounds delicious! Definitely going to try it! I love pumpkin AND granola!
