Eat of the Week: Upping the Protein

I love this egg white omelet for breakfast, lunch, dinner, or a post-workout snack. It has 31 grams of protein and it's under 200 calories. That's a lot of bang for your buck. Here's a really good article from Runner's World about protein recommendations. When I was running 5-6 days a week I tried to eat about 65-75 grams of protein, so this little snack became a favorite not only because it tastes so dang good, but because it got me almost half way to my protein goal.

Here's the recipe:
3-4 egg whites
1 slice jalepeno jack cheese
1/4 C. broccoli
2 oz. Kirkland canned chicken
salt + pepper to taste

The rest is kind of self explanatory. Just beat the egg whites, poor them in a small frying pan sprayed with Pam, and add the rest of the ingredients. Cook it how you like it. :) Add salt and pepper to taste. It's also extra good with avocado on top, but everything is extra good with avocado on top right?

Do you try to eat protein within 30 minutes of finishing a workout?
I didn't used to, but I do now, and I'll never go back. I've found so many yummy ways to eat protein, and it really does help with hunger.

What's your favorite protein snack?
I mentioned before that I also love Greek yogurt. Adding almonds to cereal, yogurt, salads, or whatever I'm eating is another favorite. Almond butter is so good too!

  1. Jill was just wondering about protein snacks. She should read this post. I love eggs, egg whites, egg sandwhiches, and omlettes for great protein. I also eat protein after working out... esp lifting weights
