My husband gets all the credit for this week's recipe because he made it up! I'm not very good at being creative when it comes to cooking. I can follow a recipe and maybe even change a couple things, but I rarely come up with a recipe from scratch.
Last night I wanted to have mahi mahi for dinner, but wasn't sure how to season it, so I asked Scott to help me come up with something.
Here's what he came up with:
Lemon Pepper Pistachio Sauce:
About 25 pistachios
1 tablespoon of milk
1 tablespoon of almond milk
1 tablespoon of greek yogurt (or sour cream)
Salt & pepper to taste
3 teaspoons of lemon pepper
Blend all ingredients in blender.
Top with grated parmesan cheese and extra pistachios.
(He didn't really measure everything out, so you can tweak it to your liking.
I was quite impressed. It was yummy!
And the leftover sauce made a really good salad dressing! I think I may have liked it even more as a salad dressing.
This salad was romaine, spinach, green beans, 1 large strawberry, craisins, chicken, and lemon pepper pistachio dressing. Very good. I highly recommend it.
Thanks Scott for the yummy dinners!
Also, here's a fun fact about pistachios: They are one of the lowest calorie, lowest fat, highest fiber nut. Here's a site all about pistachios and their nutrition if you're interested.
Do you like to follow recipes or make stuff up yourself?
