I got the idea for this salad from this blog. The first day I tried it I liked it so much I couldn't wait for lunch the next day so I could eat it again. Same thing happened the next day, and the next day until I had eaten this salad at least 4 days in a row. I kind of forgot about it for awhile, and then I had it for dinner again tonight. It was still just as good as I remembered it.
Here's the recipe:
It's always a little different every time I make it, so I'll just list the different ingredients I've added to it, and then you can add whichever ones you like in whatever portions you like. I'll put a star next to my favorite ingredients for this salad.
Spinach
Romaine
*Edamame
Cooked Zucchini
Feta
Broccoli
Cooked Green Beans
*Cashews or Chopped Peanuts
Cooked Mushrooms
*Avocado
*Soy Sauce/Almond Butter Dressing (recipe below)
I love the homemade dressing for this, but I'm still experimenting with getting the portions right. I mix some soy sauce with almond butter (I'm sure peanut butter would work too), agave, and water. The soy sauce/almond butter/water/agave portions have been different every time I've made it, but tonight I think I used 1 tsp. gluten free soy sauce, 2 tsp. almond butter, 1 tsp. agave, and 1tsp. water. I'm going to keep experimenting with this dressing until I figure out my favorite ratio of ingredients.
Anyone else have a recent food obsession?
This one is an older one. My most recent food obsession is anything with pumpkin. I guess it's my way of trying to feel like it's Fall even when the weather doesn't. We went to Jamba Juice today after the pool and they had a new pumpkin smoothie out that looked really, really good. I wanted to try it, but sadly they were all sold out of it. That just proves it's good right? I'll try back next week though.
