Eat of the Week: Tofu Chinese Salad

I've never included tofu in my diet before, but I decided I would after I had a really yummy Pad Thai dish with tofu on Christmas Eve. I was surprised by how much I liked it, so I bought some tofu the next time I went to the grocery store. I don't know a lot about tofu yet, so I still can't decide if I'm going to buy it again or not. I've read a few things online about it, and there seems to be some controversy on whether or not it's healthy for you. It definitely has health benefits, so I'll continue to eat what's in my fridge, but I also want to continue to read up on it before I decide if I want to buy more.

Anyway, whether it's the healthiest food in the world or not, this salad was dang good. And if you're not a tofu fan, just switch it out for chicken.

Here's the ingredients in whatever portion you choose:

Romaine
Spinach
Red peppers
Zucchini
Edamame
Pineapple
Cashews
Hard or Firm Tofu
Sesame Oil
Soy Sauce
Red pepper flakes

Directions: I browned the tofu in a non-stick pan with a little bit of soy sauce, sesame oil, and red pepper flakes. Then I browned the zucchini and red peppers and tossed all ingredients together.

It was a really yummy Sunday afternoon lunch!

What are your thoughts on tofu? Is it healthy or not??

  1. You know, I am still undecided as to whether to even buy it or not. I have picked it up SO many times to do so, but always end up putting it back. I am a huge texture person, and I am not sure what the texture would be.
    Awesome salad though! :)

  2. I eat it out (and LOVE pad thai) but actually for medical reasons I am not supposed to eat much soy. I think it's only really a problem if you have had breast/ovarian cancer or someone in your near family has, putting you at risk. Otherwise it's delicious!

  3. I don't really follow anything about tofu, I have had it before but I don't think my husband would want to eat it! That salad looks really good!

  4. I love tofu! I wish I could make it, I never get it right :( it taste great unlike what most people think. Now that I cook much more than before, I should really try to make it myself!!
