Eat of the Week: No-Prep Slow Cooker Salsa Chicken

I love slow cooker dinners, especially the ones that don't require chopping, peeling, or measuring beforehand. This is one of my favorite dinners because 1.) It tastes good (I think Scott even likes it more than I do). 2.) It's healthy. 3.) It takes me about three minutes to open the cans and dump everything in. Then I don't even have to think about dinner again until we're ready to eat it.

We had this last Sunday and it was nice to walk in the door to the good smell, and feeling, of dinner being done. I hate cooking when I'm hungry. It makes me grumpy. Actually just being hungry in general makes me grumpy, so I try to use the slow cooker as much as possible on Sundays because we usually don't get home from church until about 6:00PM. By that time, my hunger grump is pretty close to the surface.

I got the original recipe from Livestrong, but I couldn't find it again when I went to look for it. So here's how I made it this past Sunday.

6-8 frozen chicken tenderloins
2 cans corn (with juice)
1 can black beans (I left the juice in this too, but I'm sure draining them is fine too)
1 16-oz. bottle of salsa
(Optional) 4 oz. cream cheese stirred in at the end.
(I've made it with and without the cream cheese. It's good both ways.)

Cook on low for 5-7 hours, or until chicken is done.

My favorite way to eat it is served over brown rice, which is also super easy now that we just picked up a rice cooker at Costco, but you can also eat it with tortilla chips. We topped ours with cheese since we left the cream cheese out this last time.

I'm all about the easy, healthy, yummy dinners.

What's your favorite easy dinner?
